Salsa a great side dish
Most of you know I have been a motivational speaker in the weight loss industry for 23 years. I lost 55 lbs in 1999 and have kept it off with no deprivation and boring diet foods. Variety in all meals is so important. One of the things I personally struggle with on a daily basis is making proteins more exciting. If I get bored I always end up back at breads and potato’s so I had to get very creative. So I started playing around in the kitchen and found that Homemade Salsas are an amazing way to bring in a ton of flavors and a huge variety of ingredients. First things first let's talk all the different ingredients you can use.
Vegetables Diced into a small pieces
Peppers: poblano, jalapeño, green, red, yellow, orange, habaneros
With peppers the heat depends on the type. To keep the heat down be sure to remove the seeds and ribs if you like heat keep them in.
Corn ( I love fire roasted you can get it in cans or in the freezer section) tomatoes, shallots, red onions, scallions, sweet onions, green chilies, tomatillos, cucumbers
Fruits diced into small pieces
Mangoes, strawberries, pineapple, watermelon, kiwi, apples, mandarin oranges, avocado
Beans, etc
Black, garbanzo, pinto, garlic, lime juice, orange juice, olive oil, parsley, cilantro, mint, basil
Salsas come in several different ways. A smooth salsa can be used as a sauce for big flavors. Adding it to meats that are going to cook all day in the crock pot or in an insta pot. Chunky salsas can be eaten hot or cold depending on your preference.
The proteins I love to add salsas to are Eggs, chicken, pork, and steak.
Using canned corn and tomatoes as well as beans. Rinse them before adding.
Chopping all your fruits and vegetables into small pieces and storing in the refrigerator you can throw a salsa together in minutes, You get to make them with all of your favorite flavors.
Here’s some favorite combos. You can make them in any combo your love and amount.
Corn salsa great on chicken and steak or as a snack
Fire roasted corn
tomatoes
red onions
black beans
avocado
salt and pepper
lime juice and a little olive oil.
Fruit salsa over chicken or with yogurt or cottage cheese
Strawberries
Red onions
Mango
Cilantro
Jalapeño
Honey
Lime juice
Pineapple salsa Great over pork or chicken.
Pineapple diced
Roma tomatoes diced
Cilantro
Red onion finely chopped
Jalapeño peppers seeded and finely
Fresh lime juice
Salt and freshly ground black pepper
Hot pepper sauce to taste, optional
Tomatillo Salsa Excellent over pork, chicken and eggs.
Also add to crockpot with pork or chicken.
1 teaspoon olive oil
1½ pounds tomatillos, husks removed
1 jalapeno
¼ of a medium onion
2 garlic cloves
½ cup cilantro
1 tablespoon lime juice
Quarter onions, jalapeño and tomatillos add garlic cloves on a roasting pan drizzle with olive oil and roast on 425 for 15 to 20 minutes. Let cool put all ingredients into food processor, pulse until smooth.
Easy and fast Salsa.
1 can rotell tomatoes
1 small onion quartered.
Salt and paper to taste
1 jalapeño quartered (remove seed and ribs to calm the heat)
Lime juice to taste
1 clove garlic
Cilantro bunch (optional)
Throw in the food processor pulse until smooth.
Chick pea salsa
Chickpeas, drained and rinsed
Halved cherry tomatoes
English cucumber, seeded and chopped
Red bell pepper, chopped
Small red onion, finely chopped
Sliced black olives
Mix together Drizzle with an oregano flavored olive oil and lime juice.
Black Bean and Avocado salsa
Black beans (canned works great just rinse)
Avocado (diced)
Roasted corn
Shallots diced
Cilantro
Tomatoes diced
Red pepper diced
Olive oil
Lime juice
Salt and pepper to taste
As you can see I just offered you lots of ideas your amounts and varieties are up to you. I love to make big batches and keep in the refrigerator . Things with avocado I wait until ready to wait to add . The longer salsas sit the stronger they taste. Always give them at least an hour together.
